As the largest and most diverse fishing port in the country and the only place you can experience a live fish auction; Brixham can proudly call itself the capital of England’s seafood coast. There is then, no better place to host the Seafood FEAST, a new two-week event celebrating some of the best seafood in the world. Read all about it and watch The Shorely’s exclusive interview with Brixham chef Ash Hamilton.


Seafood FEAST will host over 60 seafood themed events where people can experience everything from a fish market tour to a night on board an original Brixham sailing trawler. So, what you going to book first?

From Saturday 22 September to Sunday 7 October, restaurants across the Bay will host special seafood nights and extended menus. The Seafood FEAST really does have something for everyone. If you’re new to seafood and looking to explore new flavours then perhaps go for the Starter & Main Course for £20 at Number 7 Fish Bistro. If you love seafood and want to broaden your taste buds then check out Ash Hamilton’s seafood supper club at The Curious Kitchen - 7 courses of the very best seafood Torbay has to offer! Take your pick from mussels and Sharpham wine at Number 7 to a BBQ and Sunday Session at Below Decks. Go for penguins and prosecco at Living Coasts or a wild ocean dip ‘n’ dine at Cantina Kitchen.

The Seafood FEAST will play host to Torbay’s best chefs. From celebrated celebrity chef and restaurateur, Mitch Tonks, to Michelin-starred Simon Hulstone at The Elephant in Torquay. It is also an opportunity for upcoming talent to show their creative flair with some of the UK’s finest seafood. Who better for us to meet then, than Ash Hamilton, the Executive Chef and personality behind two of Brixham’s coolest eateries; The Curious Kitchen and MORE from The Curious Kitchen!

Ash prides himself on offering quality local ingredients, prepared fresh in-house with ever changing and evolving menus to keep up with his own high standards and the inspiration he draws from all over the world. This leads us on nicely to something that Ash prepared exclusively for The Shorely’s readers ahead of this year’s England’s Seafood FEAST. Using locally caught mackerel and some influence from Asia, Ash produced a plate full of fresh flavours and spice. Watch the video and here’s the full recipe:

Locally sourced Brixham mackerel chilli glazed, soy chilli glaze, Asian salad and cumin flatbreads.
Serves 4

Ingredients:
4 fillets of local mackerel ‘V boned’
Salt and pepper
50ml dark soy sauce
50ml chilli jam
1/4 red cabbage sliced thinly
1 large carrot peeled and into ribbons
1 bunch spring onions finely shredded
1 tbsp sesame seeds toasted
1 tbsp roasted peanuts toasted
1 large Pink Lady apple
Handful mint shredded
Handful coriander
Zest of 1 lime
1 tbsp maple
50ml sesame oil
25ml dark soy sauce
Juice 1 lime
1 tsp paprika
1 tsp ground cumin
125g spelt flour
125g self-raising flour
175g natural yogurt
1/2 tsp baking powder

Method:
Heat oven to 300’c (or as hot as it will go). Put a baking sheet into oven to get SUPER hot.

First make the flatbread - mix all ingredients until combined adding a little water if too dry/ little more flour if too wet. Bring into a ball and cling film, set aside.

Whisk all the dressing ingredients together until combined.

Mix all salad ingredients in a big bowl and add the dressing. Set aside.

Divide flatbread into 4 and roll each out into ovals until about 2mm thick.

Place on the hot tray in oven and bake for about 2-3 minutes, until golden brown. When done take out tray and set aside to cool.

Heat heavy bottom frying pan with a splash of rapeseed stove till sizzling. Gently lay seasoned mackerel in pan (skin side down) pressing down for a few seconds to stop it curling up. Turn the heat down to medium and cook skin side down for 2-3 mins.
